Vinification: Spontaneous fermentation in concrete with 30-35 gg submerged cap maceration, during this period the malolactic fermentation also takes place.

Aging: Light pressing and aging for 13 months in French oak tonneaux. Subsequent bottling without filtration or clarification.

Only 600 bottles produced for this spectacular pure N. The grapes are grown in 0.7 ha of vines at an altitude of 500 meters on the steep terraces of Valchiusella.

The special vinification gives the wine significant structure but maintains a unique freshness that makes the wine particularly versatile in table pairings. Notes of dark forest fruit, smoke, eucalyptus.

Valchyara

The Valchyara farm was founded in 2017 with the intention of recovering the historic Erbaluce and Nebbiolo vineyards, present since the late 1800s on the steep terraces bordered by dry stone walls, in Valchiusella in the morainic amphitheater of Ivrea.

2.3 ha worked biodynamically where the varieties present, in addition to the aforementioned Erbaluce and Nebbiolo, are the indigenous Croatina, Freisa and a small amount of Riesling.
